As we do in the vineyard, we try and observe the influence of the moon by choosing the days we work in the cellar.

Je vinifie chaque terroir de manière séparée afin d’apprendre à mieux les connaitre, d’une part, et d’autre part, pour conserver dans la bouteille, la typicité du terroir de chaque parcelle d’un millésime sur l’autre.

I vinify each terroir separately to get to know them better and to preserve in the bottle the typicity of each plot from one vintage to another
